#EdenCooks - Chocolate Truffles! - Mon. Feb 20 at 8pm EST

Contributor: Antipova Antipova
Welcome to the February Meeting of Eden Cooks! Eden Cooks is a cooking club for any interested members of the Eden community. We will meet on the forum to discuss everything from tips and pointers for less well-equipped kitchens, explanations of cooking terms, and important techniques. There will be a featured recipe each meeting, with pictures taken as I prepare it for you. I will cover some ingredient substitutions to make each recipe more friendly to people with dietary restrictions.

Those Whitman's Samplers and Godiva boxes beckoning to you at this time of year can be awfully tempting, whether you're wanting some decadent chocolates to gift to your lover, or to savor all for yourself! But why buy them from the drugstore when you can have a romantic evening in the kitchen making the rich chocolate bonbons all by yourself? Join us this month for all the ins and outs of trufflery, and grab some chocolate and some cream and some favorite flavorings to make a special treat for yourself and those you love.

During the meeting, two $25 gift cards to EF will be awarded to the winners of a trivia contest from information that I will provide during the meeting.

The meeting will take place on the EdenFantasys forum in this very thread at 8 pm EST on Monday, February 20th. I've learned a lot of new techniques in preparation for this, and I can't wait to share them all with you, so I hope to see you there! And if you just can't wait til the meeting starts, drop by the Eden Lit roundup to read some sexy stories featuring tuffles!

Can you post recipes in advance so we can be ready and/or try in advance and ask questions?

I agree. It would be nice to give it a try beforehand so that any doubts can be clarified on the 20th.

Okay---posting recipes would be awesome because I would LOVE to have people be able to ask questions!

But because the greater part of the meeting is discussing the recipe, if I gave out exactly what I was doing beforehand, there wouldn't be much of a meeting. But it would be awesome if you came with questions already, so let me give you a few recipes that you can try out.

That way we'll still get to unveil the Eden Cooks recipe together, but you'll have extra experience to ask questions with. Sound fair?

Try these out (I found them just with a quick google search): Aztec Truffles from about.com, basic truffles from Cooking for Engineers.com.

And share all your experience, too! Hooray for people being excited for this!

Ooh, that's a smart idea! It seems like I only ever make candy in the winter too... I guess the lower humidity and the lower room temperature means they don't get all sticky. Maybe I'll try sometime in the summer just to see what happens!

Thanks for the recipe links. I have seen "chili chocolate" before but I am not adventurous enough to try it--has anyone ever eaten it? I went to both links and the 2nd also had some good information about melting chocolate. I tried the basic recipe and I ended up waiting too long to form the balls because the chocolate got really hard. I just left it on the counter to soften but it didn't work out too well. I am looking forward to the chocolate class.

Oh, I eat chili chocolate all the time, I love spices though

I just let mine harden on the counter, room temperature is cool enough that it'll solidify your chocolate, rather than softening it.

To make yours again, you might be able to cut the hard stuff you have up into chunks, and then scald some more cream and melt your second-attempt chunks and some more pure chocolate with that? Or just eat it with a spoon
