Chicken and Dumplings is the world's easiest crockpot recipe, and such great comfort food!
Set your crockpot on low and add 2 cups of water. Add 3 cubes of bullion, 3/4 teaspoon thyme, 1/2 teaspoon oregano, 1/4 teaspoon basil, 3/4 teaspoon garlic powder, 1/2 teaspoon ground white pepper. Stir, making sure the bullion dissolves.
Take 3 large chicken breasts and cut each into thirds. Drop the thirds in the chicken stock mixture in the crockpot. Walk away and allow to simmer around 3-4 hours. Come back and use a fork to partially flake apart the chicken. Add one can of cream of chicken soup and one can of cream of celery soup. Stir until the soups and stock are well mixed, resulting in a creamy, almost gravy-like consistency. Leave for another 1-2 hours on low, stirring occasionally.
Take 2 cans of cheap biscuits - I usually buy the kind that come 4 tubes in a bundle. Make sure you don't get the ultra rising kind or anything fancy. Lay out the biscuits and cut each into quarters. Roll the quarters into small balls and drop into the crock pot with the chicken mixture. Let the chicken and dumplings cook for another 20 minutes or so, stirring occasionally. Voila! Uber easy and cheap chicken and dumplings. Serves 4-6 people.
