Lately I have been going all out with extra virgin olive oil, because it helps prevent constipation, and also maintains my digestive tract health. I've been adding it to my salads, and dipping french bread with it. Are you into EVOO also? Do you use the cold compressed type or just regular EVOO? Care to share what brand you use?

Extra virgin olive oil is one of the healthy oils I use on a regular basis (along with coconut oil, organic butter and bacon drippings.) Unlike the other three, I only use EVOO cold, NOT for cooking. That's because being an unsaturated fat, its bonds (and vitamin E) are easily damaged by heat. My father, on the other hand, was born and raised in Italy and uses olive oil for EVERYTHING. It's not like it's necessarily UNhealthy, but why spend good money on cold-pressed EVOO and then destroy some of the benefits by heating it? My grandfather used to cook with lard a lot--I'm guessing the unfair propaganda against animal fats over the last few generations made by dad change his style of cooking. Oh well, I'm bringin' it back. ;-)

I've really only ever used Cold Pressed EVOO and I use it in a lot of cooking really. I do not enjoy it by itself however, I can't sit there and dip bread into it and eat it like that, even if it has italian seasonings or other seasonings. No certain brand I like really, I just buy the cheapest I can find.

I use EVOO constantly - it goes in most recipes, to make salad dressing, to dip bread in, etc.

EVOO is a main staple in my kitchen and in my diet. It's incredibly good for you, AND it tastes great! Just so you know, if no one else has mentioned it, it's "cold pressed," not "cold compressed."
