Citrus Chicken

I LOVE citrus chicken in the summer time. The tangy flavor wakes up my taste buds.

Ingredients
1 lb chicken breast and thigh portions (skin on preferred)
1/2 c orange juice
1/3 c lemon juice
1.5 tsp thyme
1 tsp sea salt
1/2 tsp black pepper
1/8 tsp garlic powder

Directions
Mix orange and lemon juices with the spices in a baking dish. Place chicken in baking dish and allow to marinate in juice mixture for 10-15 minutes.

Preheat oven to 450F. Bake chicken, skin side down, for 20 minutes. Flip chicken so skin is facing up. Bake for another 15-20 minutes, until chicken is cooked through. Sprinkle skin with sea salt, and broil for 1-3 minutes. Skin should be nice and crispy.

Serve with rice and steamed vegetables (I prefer broccoli).

I'm not a vegetarian, but I also recently tried this lemony tofu recipe, and it was great.

Rosemary-Lemon Baked Tofu

I added some dijon mustard to the marinade, and you just keep baking it until it gets to the texture you want. It slowly dries out, concentrating the protein, and gets chewier with a crispy outside. Or you can bake it for less time and it will be more tender.

Since there is nothing unsafe in its raw form in the marinade, you can also keep basting the tofu with the leftover marinade, or even spoon it over the slices when serving.
