anyone have any advice for trying to make a cherry chonga? basically a chimichonga with cherries in it?

It doesn't sound like a bad idea to me at all. More of a dessert twist on an old classic. Fruit has been used to compliment meat in dishes for centuries, it's not something totally off the wall. But, I have a feeling that isn't what the OP is looking for at all.

A Google search turns up half a dozen recipes for strawberry chimichangas and apple cheesecake chimichangas, so forth and so on.
To the OP: I suggest taking this recipe, Strawberry and Cream Cheese chimichangas, and adapting it for cherries instead. If you use a canned pie topping, omit half the amount of sugar because it's already loaded with a ton as it is.
You can use apples, blueberries, strawberries, apricots, mandarin oranges or whatever your heart desires!
